ORANGE, RADICCHIO, RADISH & MOZZARELLA SALAD
SERVES 4 INGREDIENTS
• 2 oranges, peeled and cut into segments
• ½ head of radicchio, leaves separated and torn
• 2 cups rocket leaves
• 4 radishes, sliced finely into rounds
• 120g buffalo mozzarella ball, torn
• 1 tbsp sherry or balsamic vinegar
• 2 tbsp olive oil
METHOD
1 Arrange orange, radicchio, rocket, radish and mozzarella on a serving plate. Drizzle with vinegar and olive oil then serve.
