The bitter taste of some veges can put some people off. But, say researchers from Purdue University in the US, the secret to consuming more bitter foods is simply to keep eating them. Researchers followed 64 participants for six weeks, who drank milk flavoured with different amounts of unsweetened cocoa. As they drank more bitter milk, their saliva changed to produce proteins that made the milk taste less bitter. Essentially, the more greens you eat, the less bitter they’ll taste – and the less sugar you use, the less you’ll need. But once participants stopped consuming the bitter foods, their saliva reverted to its original structure. Just another reason to keep eating your greens!
