Gin­ger co­lada

A healthy take on a tra­di­tional piña co­lada, this re­places sugar syrup with ste­via, which you ad­just to your taste. How­ever, with creamy co­conut, which has myr­iad health ben­e­fits, we doubt you’ll need it. It also adds gin­ger, to counter next-day nausea and as­sist di­ges­tion.

YOU NEED 10cm lemon­grass stalk 1 thumb fresh gin­ger 3 pineap­ple chunks, plus ex­tra to gar­nish 45ml rum 20ml co­conut milk Ste­via, to taste Ice cubes TO MIX

1 Chop the lemon­grass and roughly slice the gin­ger. 2 Place in a cock­tail shaker and mud­dle un­til crushed 3 Add the pineap­ple and mud­dle un­til juicy. Add the rest of the in­gre­di­ents and some ice. Shake for 20 se­conds 4 Strain into a glass or hol­lowed-out pineap­ple and gar­nish with ex­tra pineap­ple slices.
