YOU NEED 10cm lemongrass stalk 1 thumb fresh ginger 3 pineapple chunks, plus extra to garnish 45ml rum 20ml coconut milk Stevia, to taste Ice cubes TO MIX
1 Chop the lemongrass and roughly slice the ginger. 2 Place in a cocktail shaker and muddle until crushed 3 Add the pineapple and muddle until juicy. Add the rest of the ingredients and some ice. Shake for 20 seconds 4 Strain into a glass or hollowed-out pineapple and garnish with extra pineapple slices.
