Be­cause I start my day so early I need to get a good brekky in me, but I also like to max­imise my sleep. My so­lu­tion is to pre­pare these break­fast frittatas a few days in ad­vance.

You sim­ply whisk six eggs to­gether, throw in a load of frozen veges – peas, corn, and car­rots, usu­ally – then some chopped ham and some feta cheese. Di­vide in a muf­fin tray and then put in the oven for 15 to 20 min­utes on 180°C. Su­per-sim­ple and su­per-quick. My two-and-a-half-year-old doesn’t want to eat any­thing with veg­eta­bles in it, but these hand­ily mask the good stuff so he’ll eat them too.
