SARAH’S SIMPLE BREKKY FRITTATAS
Because I start my day so early I need to get a good brekky in me, but I also like to maximise my sleep. My solution is to prepare these breakfast frittatas a few days in advance.
You simply whisk six eggs together, throw in a load of frozen veges – peas, corn, and carrots, usually – then some chopped ham and some feta cheese. Divide in a muffin tray and then put in the oven for 15 to 20 minutes on 180°C. Super-simple and super-quick. My two-and-a-half-year-old doesn’t want to eat anything with vegetables in it, but these handily mask the good stuff so he’ll eat them too.
