Honey-Roasted Stonefruit Granola Bowl

Roasting fruit is an easy way to add multiple layers of flavour and intensity. Sweet notes of honey and vanilla make the soft flesh melt in your mouth. If stonefruit aren’t in season, apples and pears make good substitute­s. Serves 3. Gluten-free, dairy-free, vegetarian. 6 stonefruit (peaches, plums,

nectarines, apricots)

1 tbsp coconut oil, melted 1 tsp honey

¼ tsp vanilla bean paste

or extract pinch sea salt

To serve

coconut yoghurt granola or muesli

Preheat the oven to 200ºC. Cut the stonefruit into halves or quarters, depending on the size of the fruit, and remove stone. Place the fruit on a baking tray. In a cup, combine the coconut oil, honey, vanilla and salt. Drizzle the mixture over the stonefruit and toss to combine well. Roast for 15 minutes or until the fruit becomes soft and caramelise­d.

To serve, place the roasted stonefruit in a bowl and top with coconut yoghurt and granola or muesli.
