Frozen Fruit An iceblock recipe that makes the most of the berry season

These iceblocks will help you make the most of summer! The hero ingredient is blackberri­es, which are packed full of vitamin C and are also high in fibre. They are a great treat for kids (or big kids) and are full of flavour and goodness. The drizzle of white chocolate melted over the top makes them look soooooo fancy pants. But you can eat them without this if you wish. Makes 4-6 iceblocks (depending on the size you make them)

2 cups blackberri­es (I use frozen blackberri­es, which are available most times throughout the year at supermarke­ts)

¾ cup coconut cream

¼ cup coconut milk

3 tbsp maple syrup grind of sea salt

1 tsp vanilla bean powder about 8 squares Whittaker’s White

Chocolate (optional)

Place all the ingredient­s (except the chocolate) into a blender and mix. Pour the mixture into iceblock moulds and leave in the freezer to set overnight.

The next day, take the iceblocks out of the mould and place on a sheet of baking paper.

If doing the drizzle, heat the white chocolate slowly using a bain-marie (put the chocolate in a glass bowl and then place this bowl inside a large pot filled with about 2cm of water. Heat the pot of water slowly and it melts the chocolate without burning it).

When the chocolate is melted, get a spoon full and then drizzle it over the iceblocks. Next take the iceblocks off the baking paper and place them in a container in the freezer until they are ready to eat. Then enjoy one whenever you like. My kids like to come home from school and take one out of the freezer during summer.
