Zucchini, Chilli, Mozzarella & Lemon Pizzas
One of our absolute go-to dinners – ready in 15 minutes and always a winner – great with drinks on a Friday night too…
Serves 4
4 thin pizza bases
1½ cups grated parmesan 21/4 cups grated mozzarella,
reserve ½ cup
4 medium zucchini,
thinly sliced
250g buffalo mozzarella,
drained
finely grated zest of 1 lemon 1 tsp chilli flakes sea salt and freshly
ground pepper
To serve
1/4 cup mint leaves
2 tbsp lemon-infused olive oil
Preheat the oven to 200°C. Lay the pizza bases on oven trays and divide the grated cheeses between them. Arrange the zucchini slices on top of the cheese, and tear the buffalo mozzarella into small chunks. Dot these on the zucchini with reserved grated mozzarella, and season with lemon zest, chilli flakes and salt and pepper. Cook for 10 minutes, or until golden. Drizzle with lemoninfused olive oil to serve.
