A dreamy blue drink

Imade this smoothie bowl with The Tea Thief’s Tickety-brew tea. That’s what gives this the blue unicorn colour – and a fresh, earthy delicious subtle lavender taste. The naturally blue calming tea boasts antioxidan­ts.

You can devour this smoothie bowl just as it is. But the topping brings it to the next level. Seek out Bay of Plentygrow­n Eureka Blueberrie­s, which are available in season in supermarke­ts. They’re bumper-sized, crunchy and so fresh and full of flavour. If they’re not in season, then frozen blueberrie­s are fine too. My son Finn has blueberrie­s in his smoothie every morning so I keep blueberrie­s in my freezer all year round.

Blue Unicorn Dream Bowl

Serves 1 Smoothie

1 tsp butterfly pea powder tea in 1 cup of hot water, cooled (see note below)

5 ice cubes

1 frozen banana 1 tbsp maple syrup

1 tsp vanilla bean powder

Topping

½ cup Eureka Blueberrie­s two sprigs mint

Place all the smoothie ingredient­s into a blender and mix. Pour into a bowl (or two small bowls) and then add the toppings.

Note: I used a teaspoon of the Tea Thief’s Tickety-Brew organic butterfly blue pea flower, ginger and lavender tea. Once cooled, I used the dark blue liquid to make this smoothie bowl. Alternativ­ely, use spirulina powder in 1 cup of water for this recipe – I recommend Tahi Spirulina, a high-quality NZ brand.
