Don’t throw away celery leaves – they can be used to flavour soups and stews. Wash the leaves and pat dry, then spread on a baking tray and bake in a low oven until brittle. Crush or rub them finely and store in an airtight container. Or, if you are short of parsley for a recipe, used chopped celery leaves instead.
