Walnut Breakfast Cookies

Not that you need an excuse to eat cookies for breakfast, but these ones are packed with wholesome nutrients and also taste sensationa­l. I’m obsessed with the combo of wholesome oats and gooey banana – so delicious, especially straight out of the oven. These are made in one bowl and are ready in 30 minutes. Serves 8-10 / 30 minutes GF 2 ripe bananas, mashed 1 tablespoon coconut oil,

melted

1 tablespoon maple syrup or

honey

1 cup gluten-free rolled oats ½ cup gluten-free oat flour ¼ cup pumpkin seeds ½ cup chopped walnuts (could substitute other nuts)

¼ cup chia seeds

1 teaspoon ground cinnamon ½ teaspoon ground nutmeg 1 teaspoon ground ginger 1 teaspoon baking powder ½ teaspoon baking soda
