Walnut Breakfast Cookies
Not that you need an excuse to eat cookies for breakfast, but these ones are packed with wholesome nutrients and also taste sensational. I’m obsessed with the combo of wholesome oats and gooey banana – so delicious, especially straight out of the oven. These are made in one bowl and are ready in 30 minutes. Serves 8-10 / 30 minutes GF 2 ripe bananas, mashed 1 tablespoon coconut oil,
melted
1 tablespoon maple syrup or
honey
1 cup gluten-free rolled oats ½ cup gluten-free oat flour ¼ cup pumpkin seeds ½ cup chopped walnuts (could substitute other nuts)
¼ cup chia seeds
1 teaspoon ground cinnamon ½ teaspoon ground nutmeg 1 teaspoon ground ginger 1 teaspoon baking powder ½ teaspoon baking soda
