Best Homemade Fries


One of the best things about dining alone is that you get to eat exactly what you want. Sometimes for me that’s a plate of hot chips and these ones are THE BEST! No double or thrice cooking, just start them in cold oil and they really do work out magnificen­tly. Makes about 1 scoop / Gluten-free / Vegan

1-2 large potatoes

(I use Agria) cooking oil (I use grapeseed

but any cooking oil will do)

To serve sea salt flakes tomato sauce mayo

Cut potatoes into fries/chips and place in a pot. Pour in enough oil to nearly cover the potatoes.

Place pot on a medium heat and cook for 25 minutes without disturbing (you can jiggle the pot a bit after 15 minutes but don’t stir!).

When they’re golden, remove from the oil with a slotted spoon and drain on paper towels.

Sprinkle with salt while they’re hot. Serve with tomato sauce and mayo along with an ice-cold drink of your choice – kombucha in my case!

Note: The oil is fine to use again for other cooking or another batch of fries, then another...
