What’s the star on the list at Aubergine? Toby Bekkers’ McLaren Vale syrah is out of this world – silky tannins, fruity, earthy and full-bodied. Best pairing? Our roasted saltbush lamb with black garlic purée and an Anjou cabernet franc by Château Pierre-Bise. Favourite variety? I can drink riesling from 6am until 4am. What should the world know about Canberra wines? They’re cool climate and well balanced. Tim Kirk and Bryan Martin from Clonakilla are the big boys in the region, and I like what Bryan Martin is producing under his own label, Ravenswort­h. Hangover cure?
