New York before coming home to wow diners with his unflappable good humour and substantial (but lightly worn) knowledge of wine at Bentley’s original Surry Hills site. He’s worked across the group’s three restaurants, but it’s fronting Monopole, the wine bar in which he also holds a stake, where his wit and ease with even the most demanding diners shines brightest.
