In this case, it was inspired by my travels in northern Italy where combining lemon and coffee is commonplac­e. I’ve served coffee with lemon biscuits, lemon jelly and even limoncello.

“A humble dish, the delicate texture of the sponge is achieved using a simple but effective combinatio­n of heat and steam. It’s then paired with a fluffy mousse and two shots of a Nespresso Grand Cru from the intense range to create a most distinctiv­e contrast against the lemon.”
