What’s on the list? I try to find the best native grapes from every country. Anything new? I’ve been enjoying Portuguese wines recently. And at LuMi, we have a wide range of sake – I wasn’t a big fan but it works really well with food. Favourite match? A very good one was the tagliolini with eel, silverbeet and orange zest matched with a Flaibani pinot grigio from Friuli. Winemakers to watch? I’m very traditional when it comes to Italian wines, but with Australian wines I like emerging winemakers – one is Jasper Button from Commune of Buttons. I really like his clean style of skin-contact wines – they’re very funky.
