Sean Moran is owner, chef and creative director of Sean’s Panaroma in Sydney’s Bondi that, in 2018, celebrated its 25th anniversary. The former (sydney) magazine contributor and author of the cookbook Let it Simmer grows the produce that “becomes the foundation to our simple, soulful cooking” at the farm in Bilpin, NSW, he runs with his partner Manoo – and he’s a self-proclaimed “sucker for heirloom anything”.
