Champagne Gimlet

SERVES 4 // PREP TIME 20 MINS “This is our version of a Gimlet – the addition of Champagne makes everything better!” Says McConnell.

Finely grated zest of 1 lime 100 gm caster sugar

100 ml verjuice

120 ml gin

120 ml brut Champagne

1 Chill 4 cocktail glasses.

2 To make lime cordial, combine lime zest and sugar in a bowl; mix well and set aside to infuse (15 minutes). Add verjuice and stir until sugar dissolves. Strain through a fine sieve.

3 Combine gin with 120ml lime cordial in a large glass jug and fill with ice. Stir until combined (30 seconds), then divide among chilled cocktail glasses through a cocktail strainer. Top each glass with 30ml Champagne and serve.
