Cos hearts and green goddess dressing (V) (GF) Duncan Welgemoed

“This salad can be whipped up in less than 10 minutes and be on the table before the parmesan hits the spaghetti sauce,” says Duncan Welgemoed.

½ avocado

2 tbsp mayonnaise

2 tbsp chopped chervil, plus ¼ cup whole leaves 1 tbsp chopped chives

1 small French shallot, chopped

1 tbsp extra-virgin olive oil

2 baby cos lettuce hearts

1 Blend avocado, mayonnaise, chervil, chives, shallot, olive oil and 60 ml (¼ cup) water until smooth; season to taste.

2 Quarter lettuce hearts lengthways, arrange on a platter, then drizzle with dressing. Scatter with extra chervil.
