SIMPLE PLEASURES

Whip up fuss-free sweet treats with recipes from Lazy Baking

- by JESSICA ELLIOTT DENNISON.

Whip up fuss-free sweet treats from Jessica Elliott Dennison’s new book, Lazy Baking.

I’m a home cook. So when it comes to baking, my approach means minimal fuss, yet comforting and delicious. These are the trusted recipes I use most often in my busy life. So, as with my previous books, expect minimal ingredients (that are all easy to find), standard kitchen kit, little need for washing up, plus lots of ideas for adapting recipes to make them seasonally relevant. There’s an emphasis on fruit when it’s at its best and most affordable, plus pantry items like miso paste, fennel seeds, tahini and sea salt, along with plenty of citrus zest to bring interest, brightness and flavour to the bakes rather than tooth-aching sweetness.

I’ve done all the hard work so you can enjoy the same reliable bakes in your own home as I do in my little but well-loved kitchen. Presenting the special people in your life with a big pot of coffee and something warm, comforting and sticky from the oven, without any fuss, is surely one of life’s simplest pleasures.

“Inspired by the simple breakfast cakes you find across Italy, this is the perfect bake to enjoy with an espresso.”
