Notes on chilli oil

Chilli paste in soybean oil is available from Asian grocers. The fried garlic will continue to crisp up and deepen in colour as it cools. If you prefer an extra spicy chilli oil, make sure you add all the chilli seeds or select only spicy chillies. For less heat, omit the seeds. Keep a careful watch on the oil as you’re cooking; too hot and you will burn the spices. You want to maintain a consistent medium heat. Ensure you properly sterilise your jar and store chilli oil in a cool, dark place.
