Burger mania may have peaked in the 2010s but this year saw us embark on a new burger bender, swapping beef for fish. This gentler rendition suits our seafoodlov­ing climate, while also tapping into our love of a paper box filled with fish and chips. While some were pandemic pivots, you can expect the fish sandwich to have staying power on menus across the country.
