Fer­vor thrives among na­ture

Feast­ing on na­tive Aus­tralian in­gre­di­ents in a tran­quil set­ting un­der the stars be­side the Stir­ling Range is what makes Fer­vor unique.

In Cran­brook this week­end, chef Paul Iskov and his team will serve a sev­eral-course long-table din­ner in a roam­ing pop-up restau­rant.

Iskov said peo­ple did not see beef and chicken or tomato and car­rots at Fer­vor events, and the Great South­ern would be no dif­fer­ent.

“Peo­ple should ex­pect to see more of the emu, kan­ga­roo, quon­dong and things like that,” he said.

“We drive out to the mid­dle of a pad­dock or a salt lake or a beach and set up a table and cook for about 30 to 40 peo­ple. This one is on a beau­ti­ful prop­erty on a farm with a pink lake next to it and look­ing up at the Stir­ling ranges.”

As part of the Bloom Fes­ti­val, Cran­brook has been cho­sen for its beau­ti­ful lo­ca­tion with great pro­duc­ers and sup­pli­ers.

He said peo­ple would not just get to en­joy a fas­ci­nat­ing meal like no other, but they would be able to sit among some of the trees that had sup­plied the in­gre­di­ents be­fore them.

“The ma­jor­ity of stuff that I have learnt is from spend­ing time with tra­di­tional own­ers,” he said.

“In be­tween each course, we tell the sto­ries be­hind the in­gre­di­ents and where we sourced them and get­ting a con­nec­tion to coun­try as well. You will learn the stuff you can’t find in a book and re­spect the in­gre­di­ents so much more when you hear the sto­ries be­hind them.”

Fern­grove and Alkoomi wines will be served at the din­ner. The Cran­brook De­gus­ta­tion din­ner is on Satur­day, Oc­to­ber 13, and a sec­ond Great South­ern De­gus­ta­tion din­ner will be held in Katan­ning on Satur­day, Oc­to­ber 20.

Fer­vor will also be tak­ing part in the Food For Thought fes­ti­val this Satur­day in Al­bany.
