I recorded this with a Collings OM1 Julian Lage model though any good acoustic will fit the bill - OM style guitars will give a fast, even response on material like this and you may want to try using a capo at the 2nd fret to make things easier for the fretting-hand fingers.The recording was produced with DPA and Royer microphones through Buzz Audio and Chandler preamps running into Logic Pro X.
