What have you learned the hard way when it comes to cellaring?

Keeping wines in a temperatur­e-controlled environmen­t without temperatur­e fluctuatio­ns is vital in cellaring wines, but it’s also important to catalogue and taste wines from time to time. I have had wines that I thought would last longer and saved them for a “special occasion” only to find they are past their prime…. If wines are drinking really well, then drink them!
