Mel­bourne’s Colling­wood has a new meet­ing place with Con­gress, now serv­ing its own “sim­ple” take on re­fined, sea­sonal din­ing within a warm and wel­com­ing space. Katie McCor­mack of Mi­lieu Hospi­tal­ity says the food is hon­est in its sim­plic­ity, with an em­pha­sis on prove­nance and qual­ity rather than rein­vent­ing the wheel. Think kan­ga­roo pas­trami with cul­tured cream and fried onions, and Mi­lawa chicken with savoy cab­bage, al­li­ums and sherry vine­gar. The team has com­piled a con­cise list of ex­cit­ing wines, with a fo­cus on lo-fi pro­duc­ers, mix­ing fa­mil­iar lo­cal names with in­ter­na­tional va­ri­eties and vine­yards.
