Cool-fermented in stainless steel with cultured yeast, the fermentati­on stopped with 7g/l of residual sugar balanced by 6.2g/l of titratable acidity, 2 months on lees. Bright straw-green; lime juice flavours a swathe palate, the finish long and satisfying. 12.5% alc.
