2017 Walsh & Sons Little Poppet White
Left-field winemaking saw semillon wildfermented on skins in a concrete tank, then pressed to oak barrels to complete fermentation and maturation until Sept, chardonnay whole-bunch pressed direct to barrel. Bench trials let to an 80% semillon/20% chardonnay blend, resulting in a fresh, crisp, flavoursome wine that could easily be called natural – but it’s too good for that. 12.5% alc.
