2017 Xabregas Mount Barker Rosé

Decades ago Houghton used cabernet sauvignon to make high-quality rosé, but no others were prepared to go down that path, and even today it’s not common. Here cabernet grapes were night-harvested, crushed, held as must for 4-8 hours then pressed to tank for a cool 20-day ferment. The result is a fragrant and fresh rosé of red berries and no residual sugar. Perfect if fully chilled on a hot summer’s day. 13.5% alc.
