2015 Scotchmans Hill Bellarine Peninsula Shiraz

Hand-picked, destemmed to open fermenters, including 15% whole bunches, 5 days cold soak, then wild-fermented in small batches for 7 days at 28˚C, matured in French barriques (new to 4yo) for 16 months. The quality of the vintage and its moderate yield shine through the lens of this richly endowed shiraz. It starts with the bouquet, which is precisely reflected on the palate with blackberry, liquorice, spice, dark chocolate and cedary oak all on song. 14.5% alc.
