HOBART’S DRINK SCENE EVOLVES

The Tasmanian capital has a new deluxe destination, with Evolve Spirits Bar opening inside the MACq 01 Hotel. The high-end venue offers a list of rare spirits, including one-off bottlings of Scotch whiskies, and also features a collection of fossils dating back 550 million years, including a triceratops nose horn and a giant Russian cave bear on display. The bar opens onto a deck that overlooks the water at its wharf-side location.
