Wine­maker: Jeff Byrne The fruit for this wine was sourced from the Kel­man Vine­yard in the Hunter Val­ley. It has a long and in­tense palate with lemon and lime juice flavours, and a slight kaf­fir lime note. It is well bal­anced with a fresh, crisp fin­ish.

What do you look for in your semil­lon? We look for the fresh, bright fruit char­ac­ter­is­tics of Hunter Val­ley semil­lon: cit­rus lemon and lime with hints of green ap­ple notes. As young wines, they are very del­i­cate with a crisp acid­ity at the end, while as they age they de­velop more com­plex, creamy, toasted notes adding rich­ness and weight to the palate.

How should we en­joy semil­lon this sea­son?

Some peo­ple be­lieve you can’t en­joy a Hunter Val­ley semil­lon un­less it’s five years old or more, which isn’t the case. Young, fresh semil­lon is per­fect over sum­mer and per­fectly matches with light dishes such as fresh oys­ters and seafood.
