Hand-picked fruit, pressed, wild fermented in barrel; matured for 7 months in (30% new Austrian oak). A thoughtful sauvignon, savoury and refined, that pares back all the usual tropical fruits and looks to more refined citrus and grassy elements with green mango skin and a light dusty smokiness.
