Cellar your wine, and drink it too

Cellaring is an exercise in patience. Resisting the urge to crack into that 2012 Hill of Grace or the last bottle of your wedding wine is tough enough to be an Olympic sport.

But what if there was a way to sample a wine that James Halliday says has “50-year cellaring potential” without opening the whole bottle too early?

Coravin’s Wine Preservati­on Systems allow you to pour wine without removing the cork or screwcap. The technology, which was invented by Coravin founder Greg Lambrecht in the late 1990s originally for the delivery of paediatric chemothera­py, utilises a noncoring needle which pierces the cork without displacing the material.

As the wine is extracted through the needle, it is replaced by argon gas, to ensure oxygen doesn’t impact the remaining wine. Then, once the needle is removed, the cork expands back to its regular shape with no removal necessary.

It also works for wine under screwcap. Coravin’s Timeless Screw Caps (six are included) replace the regular screw cap on a wine, and can be secured onto any bottle for use with all Coravin Needles. The self-sealing silicone protects wine for up to three months.

This means that you can have a taste or a glass of your favourite wine and feel confident that the rest of the bottle will be perfectly preserved for weeks, months or even years, depending on the closure and style.
