100% chenin blanc, Demeter certified organic and biodynamic grapes. Matured 10 months in barrique and amphora. Wild ferment, no mlf, no fining, minimal filtration. Taut, textural, tense and almost nervy, the classic waxiness of chenin emerges only on the mid palate and beyond. This speaks of Geraldton wax flower, lanolin, brine, green apples, cheesecloth, a touch of lantana and a sprinkle of grapefruit zest. Long, modern and exciting, it shows chenin in a new light, quite different from the greats of the Loire, but no less profound. EL 14% alc.
