Red-cab­bage coleslaw & soft-boiled egg baguette

Shred­ded red cab­bage, grated ap­ple, chopped wal­nuts, re­duced-fat plain yo­ghurt, lemon juice, Tablelands Smart Spread, French baguette, chopped chives, soft-boiled eggs (quar­tered)

1 Make coleslaw: Place cab­bage, ap­ple and wal­nuts in a bowl; stir through yo­ghurt and lemon juice (bas­ing the amounts on taste). Sea­son coleslaw to taste with pep­per.

2 Spread baguette with Tablelands Smart Spread; top with coleslaw, chives and egg.

Note You can re­place the red cab­bage with the white va­ri­ety.
