Red-cabbage coleslaw & soft-boiled egg baguette
You’ll need …
Shredded red cabbage, grated apple, chopped walnuts, reduced-fat plain yoghurt, lemon juice, Tablelands Smart Spread, French baguette, chopped chives, soft-boiled eggs (quartered)
1 Make coleslaw: Place cabbage, apple and walnuts in a bowl; stir through yoghurt and lemon juice (basing the amounts on taste). Season coleslaw to taste with pepper.
2 Spread baguette with Tablelands Smart Spread; top with coleslaw, chives and egg.
Note You can replace the red cabbage with the white variety.
