into 5cm lengths 3 x 300g tubs Cre­ated with Jamie Angus Beef and Ale soup (see Cook’s tip) Chopped pars­ley, to gar­nish Dumplings 1¹⁄³ cup whole­meal

self-rais­ing flour ½ tea­spoon mixed dried herbs 40g re­duced-fat olive oil spread ½ cup re­duced-fat milk 1 Heat 2 tea­spoons olive oil in a large saucepan over medium heat. Add mush­rooms and cook, stir­ring oc­ca­sion­ally, for 2–3 min­utes, or un­til soft­ened. Add broc­col­ini and soup to pan, bring mix­ture to a sim­mer; stir. 2 Mean­while, place the flour and dried herbs in a bowl. Rub spread into the flour with fin­ger tips un­til mix­ture re­sem­bles coarse bread­crumbs. Stir in the milk to form a firm but sticky dough. Turn dough out onto a clean work sur­face. Roll dough into 8 dumplings and place over the top of the soup mix­ture in pan. Cover saucepan with lid and sim­mer, al­low­ing dumplings to steam for 10 min­utes. Serve with chopped pars­ley.
