Blen­der muffins

Greek-style yo­ghurt 2 eggs 4 ta­ble­spoons honey 1½ ta­ble­spoons self-rais­ing flour 1 tea­spoon bi­carb soda 1 tea­spoon vanilla 1 Pre­heat oven to 180°C. Spray a 12-hole (¹⁄³ cup ca­pac­ity) muf­fin tin with oil, or line and grease paper muf­fin cases with oil. 2 Place all in­gre­di­ents in a blen­der in above or­der and blend us­ing the pulse ac­tion for 1–2 min­utes, or un­til smooth and creamy. You may need to give the blen­der a stir to move in­gre­di­ents around. 3 Pour the mix­ture into pre­pared muf­fin tin. Lightly press top­pings of your choice into each muf­fin (see top­ping ideas on left page). 4 Bake for 20–25 min­utes, or un­til muffins are golden brown and a skewer in­serted in the cen­tre comes out clean. Leave to cool for a few min­utes, then re­move from muf­fin tin and cool com­pletely on a wire rack.
