Tur­key pizza melts

Serves 4 Cost per serve $3.90 Time to make 10 min

4 whole­meal pita pock­ets 4 ta­ble­spoons tomato

pasta sauce 150g cherry toma­toes 100g sliced Swiss brown

mush­rooms 150g shaved tur­key, torn 1 x 170g jar store-bought fat-free mar­i­nated ar­ti­choke quar­ters, drained ½ cup grated re­duced-fat

moz­zarella Basil leaves, to serve 4 cups mixed salad leaves 2 ta­ble­spoons bal­samic vine­gar 1 ta­ble­spoon olive oil

1 Pre­heat grill and line a large baking tray with baking pa­per. Place 4 pita breads on the tray. Heat un­der grill for 30 sec­onds each side. Spread each with tomato pasta sauce. 2 Top with cherry toma­toes, sliced mush­rooms, tur­key, ar­ti­chokes and scat­ter with cheese. Cook the piz­zas un­der the grill for 2–3 min­utes, or un­til golden and cheese has melted. 3 Gar­nish piz­zas with basil and serve with mixed salad leaves driz­zled with bal­samic vine­gar and olive oil. Cook’s tip You can re­place tur­key with left­over shaved ham off the bone, if pre­ferred.
