Turkey pizza melts
Serves 4 Cost per serve $3.90 Time to make 10 min
4 wholemeal pita pockets 4 tablespoons tomato
pasta sauce 150g cherry tomatoes 100g sliced Swiss brown
mushrooms 150g shaved turkey, torn 1 x 170g jar store-bought fat-free marinated artichoke quarters, drained ½ cup grated reduced-fat
mozzarella Basil leaves, to serve 4 cups mixed salad leaves 2 tablespoons balsamic vinegar 1 tablespoon olive oil
1 Preheat grill and line a large baking tray with baking paper. Place 4 pita breads on the tray. Heat under grill for 30 seconds each side. Spread each with tomato pasta sauce. 2 Top with cherry tomatoes, sliced mushrooms, turkey, artichokes and scatter with cheese. Cook the pizzas under the grill for 2–3 minutes, or until golden and cheese has melted. 3 Garnish pizzas with basil and serve with mixed salad leaves drizzled with balsamic vinegar and olive oil. Cook’s tip You can replace turkey with leftover shaved ham off the bone, if preferred.
