1 egg white

¼ cup lemon juice

¼ tea­spoon bit­ters

1 x 330ml bot­tle chilled

pas­sion­fruit kom­bucha

Lemon peel, to gar­nish Ed­i­ble flow­ers, to gar­nish

1 Place egg white, lemon juice and bit­ters in a cock­tail shaker; shake mix­ture vig­or­ously. 2 Add ½ cup of ice and shake vig­or­ously un­til foamy. 3 Pour kom­bucha into two glasses. Care­fully strain the egg-white mix­ture over the back of a spoon onto the kom­bucha so it floats on top. 4 Gar­nish with lemon peel and flow­ers; serve im­me­di­ately.
