1 lime, thinly sliced

¼ cup mint leaves,

1 tea­spoon honey

1 cup sparkling wa­ter

1 x 330ml bot­tle gin­ger & lemon kom­bucha

1 Di­vide lime, mint and honey be­tween two tall cock­tail glasses; crush and stir un­til mint and lime re­lease their juices and flavours. 2 Di­vide 1 cup of ice be­tween glasses, then top with sparkling wa­ter and kom­bucha. 3 Gar­nish with ex­tra lime and mint and serve im­me­di­ately.
