4 Tofu rice noo­dles with se­same dress­ing

100g thick rice noo­dles

1 medium car­rot

2 medium zuc­chini

1 small Le­banese cu­cum­ber

1 ta­ble­spoon se­same oil,

plus ex­tra

1 tea­spoon

1 ta­ble­spoon tahini

1 tea­spoon mirin

1 ta­ble­spoon lemon juice

½ tea­spoon re­duced-salt soy sauce

300g firm tofu

1 ta­ble­spoon sweet chilli sauce

2 cups mesclun salad mix

1 Pre­pare rice noo­dles fol­low­ing packet and run un­der cold wa­ter to cool. Grate or juli­enne car­rot, zuc­chini and cu­cum­ber. 2 Com­bine se­same oil, tahini, mirin, lemon juice and a dash of soy sauce in a screw-top jar. Shake well and thin with hot wa­ter. 3 Heat se­same oil in a hot pan. Cook tofu un­til golden. Re­move from heat and add a lit­tle sweet chilli sauce, toss­ing to coat. Stir dress­ing through noo­dles and ve­g­ies, along with lots of salad leaves. Top with tofu and serve.
