BIRCHER MUESLI WITH PEACH & MACADAMIA

veg­e­tar­ian di­a­betes friendly

¾ cup tra­di­tional rolled oats 1 ta­ble­spoon pepi­tas

1 tea­spoon ground cin­na­mon 1 large ap­ple, grated

¾ cup re­duced-fat milk

½ cup re­duced-fat

plain yo­ghurt

1 large peach, sliced 2 ta­ble­spoons chopped roasted un­salted macadamia nuts

2 tea­spoons honey 1 Com­bine the oats, pepi­tas, cin­na­mon, ap­ple, milk and the yo­ghurt in a large bowl. Cover and re­frig­er­ate mix­ture for at least 4 hours, or overnight.

2 To serve, di­vide the muesli be­tween two serv­ing bowls. Top with sliced peach, macadamia nuts and a driz­zle of honey.
