AFTER a suc­cess­ful stint last sum­mer, An­drew McCon­nell’s Su­per­nor­mal Natsu is back.

From to­day for two weeks, the pop­u­lar Ja­panese pop up will take over St Kilda’s Su­per­nor­mal Can­teen site where An­drew (right) will serve a com­pletely veg­e­tar­ian menu. “Veg­eta­bles are the in­gre­di­ent I’m most ex­cited about at the mo­ment,” he says.

“We’re see­ing such a broad se­lec­tion from our grow­ers (which) gives us so much more scope to ex­plore new ideas, de­velop new dishes and tech­niques that ul­ti­mately make the veg­etable the hero it needs to be.”

Along with this ver­dant veg­etable patch on the plate, silken tofu will be made daily, hand-rolled udon noo­dles will be served with dashi and herbin­fused soy, while Cut­ler & Co’s clas­sic katsu sando also gets a veg-tas­tic makeover, with egg­plant stand­ing in for abalone.

Natsu’s fort­night res­i­dency kicked off last night with a din­ner party helmed by Brent Sav­age from Syd­ney’s ac­claimed veg-only restau­rant Yel­low.
