AFTER a successful stint last summer, Andrew McConnell’s Supernormal Natsu is back.
From today for two weeks, the popular Japanese pop up will take over St Kilda’s Supernormal Canteen site where Andrew (right) will serve a completely vegetarian menu. “Vegetables are the ingredient I’m most excited about at the moment,” he says.
“We’re seeing such a broad selection from our growers (which) gives us so much more scope to explore new ideas, develop new dishes and techniques that ultimately make the vegetable the hero it needs to be.”
Along with this verdant vegetable patch on the plate, silken tofu will be made daily, hand-rolled udon noodles will be served with dashi and herbinfused soy, while Cutler & Co’s classic katsu sando also gets a veg-tastic makeover, with eggplant standing in for abalone.
Natsu’s fortnight residency kicked off last night with a dinner party helmed by Brent Savage from Sydney’s acclaimed veg-only restaurant Yellow.
