For the first time in 80 years, we’ve been introduced to a new variety of chocolate. Surprising in colour and flavour, ruby chocolate comes from the ‘ruby’ cocoa bean found in Brazil, Ecuador and the Ivory Coast and is less sweet than its predecessors, with slightly sour, berry notes.
