BEETROOT & FETA TARTS
Makes 32
6 sheets filo pastry
100g butter, melted
Filling
2 eggs
125ml thickened cream
250g cooked beetroot, finely chopped (see tip)
130g Greek feta, finely crumbled
1 tbsp chopped thyme leaves, plus extra sprig tips to serve
1. To make filling, whisk eggs and cream in a small bowl until combined. Stir in beetroot, feta and thyme. Season well. Set aside.
2. Preheat oven to 180°C. Place a sheet of filo on a clean, flat work surface and brush with a little butter. Repeat to make 3 layers of filo, finishing with butter. Cut in half to make 2 squares. Cut each square into 4 even strips. Cut each strip into 4 squares.
You should have 32 pastry squares. Cover unused filo with plastic wrap and a clean, damp tea towel.
3. Grease 16 holes of a mini muffin tin with butter. Press a square of pastry into each hole and then press the remaining squares on top in another direction.
4. Divide filling in half. Spoon a little filling into each hole until you have used half the mixture. Bake for about 20-25 minutes or until pastry is golden and filling is set. Cool for 5 minutes, then carefully remove tarts from tin and transfer to a wire rack to cool.
5. Repeat the process with remaining filo, butter and filling to make another 16 tarts. Serve hot or warm.
tip You can buy 250g cryovac-sealed packets of cooked beetroot in the supermarket , or roast 2 medium to large bulbs of beetroot (stalks trimmed and wrapped in foil) for 1 hour in a 200°C oven. Leave in foil to cool before peeling off skin and trimming ends.
