PEAR & GOAT'S CHEESE NAAN

Serves 6-8

Olive oil cooking spray

3 x 250g firm packham pears

4 fresh naan bread (see tip)

¼ cup melted ghee

1 tsp nigella seeds (see tip) 140g goat's cheese

2 tbsp lemon thyme sprig tips & leaves

¼ cup honey, plus extra to serve

1. Preheat oven to 200°C. Spray 2 large oven trays lightly with oil. With a mandolin, slice whole pears, lengthways, into 4mm slices. Spread on trays. Bake for 15-17 minutes, turning halfway, until slices are lightly golden and getting crisp on edges. Remove and let cool.

2. Lightly toast both sides of naan in a toaster or in a greased frying pan. Brush hot naan with ghee and sprinkle with nigella seeds. Cool slightly. Spread naan evenly with goat's cheese. Top with pear slices and sprinkle with thyme sprig tips and leaves. Drizzle with honey.

3. Place naan on oven trays and bake in hot oven for about 10-12 minutes or until lightly golden. Allow to cool slightly, then cut into pieces to serve. Serve with extra honey.

tip You can buy fresh naan bread (in 250g packets) from the refrigerat­ed, ready-made meal section of major supermarke­ts, or from Indian takeaway shops.

tip Nigella seeds are used in Indian and Middle Eastern food and are available in gourmet greengroce­rs stocking a large spice range. You can substitute with cracked pepper, black or white sesame seeds.
