AWARD-WINNING CHEF, TV HOST AND AUTHOR SARAH TODD SITS DOWN WITH HB TO DISH OUT THE SPICY SECRETS TO COOKING AUTHENTIC INDIAN CUISINE

Tell us a little bit about your new cookbook My Indian Kitchen, and what was the inspiration for it?

Sarah: “My Indian Kitchen is inspired by the diverse cuisine of India, where I’ve enjoyed some of my most memorable meals, including Kashmiri Spinach and Goan Fish Curry, in the homes of locals. My cookbook simplifies the Indian cooking process using basic ingredients available at local supermarkets.”

What are your go-to dishes for the cooler months ahead?

“The cooler months call for a hearty and nourishing bowl of curry, dal makhani or paneer saag. For a quick week-night meal for the whole family, you can’t go past keema. Aussies love their mince and this is a great recipe to add to your repertoire.”

What’s your ultimate dinner playlist?

“Tracy Chapman, Amy Winehouse and Chet Faker. Wonderful storytellers.”

What or who inspires your cooking, and what is your earliest memory of being in the kitchen?

“From a young age, I learnt that cooking isn’t just an essential part of living but it can be an expression of love. I remember helping my mum bake Yo-Yos and Afghan biscuits, which she gifted to family and friends in glass cookie jars at Christmas.”

Who are your dream dinner party guests?

“Ita Buttrose, Cathy Freeman and Rebel Wilson. I admire strong and independent women who are successful in their chosen careers.”

Do you have a favourite dinner party game?

“I encourage guests to put away their phones and enjoy each other’s company and conversation.”

What would your last meal be?

“My nan’s corned beef with vegetables and white sauce, followed by her bread-and-butter pudding. Food memories are so powerful, and whenever I remember sitting at my nan’s dinner table, I find it so comforting.” My Indian Kitchen by Sarah Todd, is published by

Are Media Books, $24.99, and is available from March 2.
