GARLICKY WILD RICE GREENIE BOWL

SERVES 2 PREPARATIO­N TIME 5 minutes COOKING TIME 20 minutes

GARLICKY RICE

1 cup (190g) wild rice 1 tbsp hulled tahini* 1 tbsp coconut aminos* ½ tsp garlic powder

SALAD

1 cup (40g) baby spinach 1 small cucumber, finely sliced 1 cup (50g) alfalfa sprouts 1 sheet organic nori*, shredded 1 cup (40g) pea shoots, chopped 1 avocado, peeled and sliced 1 tsp sesame seeds 1 lime, halved

1. Place the rice in a saucepan with 2 cups water. Bring to the boil, reduce to a simmer, cover and cook until water is absorbed.

2. Assemble salad ingredient­s in 2 bowls. Stir the tahini, aminos and garlic powder through the rice. Add to salad bowls.
