What do guests expect when they get an invitation to dinner at your place? Lots of gin to start, delicious food and heaps of wine. We love a wine theme, too, so will build that around whatever we are eating. It will all go o the rails after about two hours and then anything can happen.

Can you reveal the hot cocktail of summer 20/21?

It’s going to be the Big Pash: 30ml Four Pillars Australian Christmas Gin, 60ml good Aussie sparkling wine, 30ml soda water, 10ml sugar syrup and then some lime and passionfru­it. We wanted to call it Pash Rash, but wiser heads prevailed.

One great song to play at your party? Get Lucky by Daft Punk. I [Stu] heard it for the very first time at a dinner party of ours and I still remember thinking, that song is amazing. Turns out I was right.

What is your table-setting strategy? Again we like a theme, so it could be an Italian spread with olive branches, or at Christmas it’s usually empty bottles of our Christmas gin with Christmas bush. Whatever is in season really, and not too many things in the middle to interrupt chatting and potentiall­y poke out eyes! We always have at least two wine glasses because if you don’t have two di erent wines on the go at our house, then you’re not really participat­ing. And always good napkins, salt and butter. And cheese.
