It takes a lot of wisdom to make things truly simple. For recipe columnist Katrina Meynink, the years invested in building her culinary knowledge included training at Le Cordon Bleu and a series of scholarshi­ps, most notably the Julia Child Research Scholarshi­p from The Culinary Trust. These placed her in good stead as a cookbook author and consultant on other chefs’ books.

With that much knowledge under her belt, there’s a lovely discipline to the simplicity of these summerente­rtaining dishes created for Inside Out and shot at Katrina’s Brisbane home. “I believe the cooking and sharing of food is everything, and that it should be simple, flavoursom­e and enjoyable to prepare,” she explains. “That’s what this menu really attempts to achieve. There’s plenty of pre-prep to minimise last-minute cooking and stress, leaving mostly assembly on the day, which calls for only a few hands to help – large and small.”
